Easy Scotch eggs recipe to try over the weekend

As the weekend rolls in and Kenyans across the country unwind from a hectic workweek, food lovers are turning to simple, comforting meals that add a little twist to the usual.

One dish that is making waves on social media and local kitchens alike is Scotch eggs,  a quick, flavour-packed snack or side dish that takes the humble boiled egg to a whole new level.

Whether you are in Eastlands or relaxing in Mombasa’s coastal breeze, Scotch eggs are easy to make, require minimal ingredients, and deliver maximum flavour.

What are scorched eggs?

Scotch eggs are hard-boiled eggs that are fried or “scorched” in a pan to give them a crispy, browned exterior.

Often tossed in a spicy marinade or sauce, they are popular as street food in parts of India and West Africa, and are now making their way into Kenyan households thanks to food bloggers and TikTok creators.

Version 1: classic spiced scorched eggs

Ingredients:

4 hard-boiled eggs

1 tbsp cooking oil

½ tsp turmeric

½ tsp chilli powder or paprika

Salt to taste

Coriander leaves (dhania)

Optional: lemon, kachumbari or pili pili

Steps to follow:

Step 1:

Boil your eggs for 10 minutes in a sufuria and then peel them and set aside.

Step 2:

In a bowl, with turmeric, chilli, and salt. Toss in your eggs and coat every inch of them.

Step 3:

Heat your oil in a pan, then fry the eggs on all sides until crispy.

Step 4:

Garnish with dhania, serve hot. Enjoy as a snack with friends and family.

Version 2: sausage and  breadcrumb scorched eggs (mini scotch egg style)

This version is inspired by the famous Scotch egg but simplified for local kitchens, so no oven needed!

Ingredients:

4 hard-boiled eggs

2 cooked sausages (beef or smokies), mashed or finely chopped (remove the outer skin)

1 egg (raw, for coating)

½ cup breadcrumbs

Salt, pepper

Cooking oil for shallow frying

Steps to follow:

Step 1:

In a clean bowl, mash the sausages, then add a pinch of salt and pepper.

Step 2:

Take portions of sausage mix and carefully wrap around each boiled egg. If it slips, apply a little oil on your hands and dust some flour as you roll them.

Step 3:

Beat the raw egg in another bowl, then dip each sausage-wrapped egg, then roll in breadcrumbs. And set aside.

Step 4:

Ensure your oil is very hot before you shallow fry on medium heat. Until they all turn golden brown and crisp. Turn gently, after the bottom browns, to avoid breaking.

Step 5:

Slice in half, then pair with tomato sauce, kachumbari or chips.

This version is perfect for children and guests. It is crunchy, filling, and a real treat.

Version 3: potato-coated scorched eggs (for veggie lovers!)

If you want to skip the meat, you can use mashed potatoes for a crispy, vegetarian twist!

Ingredients:

4 hard-boiled eggs

2 medium potatoes, boiled and mashed

½ tsp curry powder

Salt and pepper

1 egg (raw)

½ cup breadcrumbs

Cooking oil

Steps to follow:

Step 1:

Mix mashed potatoes with curry powder, salt, and pepper in a bowl or sufuria.

Step 2:

Wrap your mashed potato around each egg like a shell.

Step 3:

Dip your coated eggs in egg mixture, carefully; you can add flour to stick them together. After dipping them in the egg, roll in breadcrumbs.

Step 4:

Shallow fry until crispy and golden. Then serve with a dipping sauce like ukwaju or ranch sauce, or plain yoghurt with herbs.
