How to make perfect chips masala at home – crispy, saucy and full of flavour

Masala fries—popularly known as chips masala—are taking over kitchens across the country with their irresistible burst of flavour.

We spoke with local chef Mohammed Said, who says the secret to perfect chips masala is not just in the ingredients, it is in the timing.

“The secret is to ensure the chips are crispy and saucy, never soggy. That is the golden rule,” he explains.

“If your fries, which is your main, are soggy, then you could have just boiled potatoes and eaten them. So ensure they have that crunch, that is what makes them perfect.”

What you need:

Ingredients:

4 large potatoes (chopped and blanched)

1 medium red onion, finely chopped

2 tomatoes, grated or blended

1 tablespoon tomato paste

2 cloves garlic, minced

1 teaspoon ginger, minced

1 green chilli, chopped (optional for heat)

1 teaspoon garam masala

1/2 teaspoon paprika

1/4 teaspoon turmeric

Salt to taste

Juice of 1/2 lemon

Fresh coriander for garnish

Cooking oil for frying

Steps to follow:

Step 1

To prepare your chips, peel and cut potatoes into thick chips. Soak in cold water for 10 minutes, then pat dry and deep-fry until golden and crispy. Set aside on paper towels to drain the excess oil.

Step 2

In your pan, heat 2 tablespoons of oil, then saute your onions until translucent. Add your garlic, ginger, and chilli. Then cook for about 5–7 minutes.

Step 3

Add the fried chips directly into the sauce, then gently toss to coat every chip evenly without tossing them, without breaking.

Step 4

Squeeze lemon juice over the top, sprinkle with chopped coriander, and serve hot. Enjoy with a glass of cold water, orange, or passion juice.

Tip: If you want it extra saucy, you can add a splash of water or a tablespoon of ketchup for a sweet twist.
