How to make the tastiest cheesy sauce to elevate your French fries

What you need:
Ingredients:
2 Tbsp Butter
2 Tbsp Flour
2 cups Whole
Mature Cheddar cheese: For punch and depth.
Mozzarella: For meltability and stretch. (Combine around 200g of grated cheese for a rich, intense flavour.)
Optional Enhancers:
Dijon mustard (1 tsp): Adds tang and complexity.
Garlic powder or minced garlic (½ tsp)
Paprika or cayenne: For colour and heat.
Salt and white pepper:
1 teaspoon of cream cheese or evaporated milk. (It stabilises the sauce and improves texture.)
Steps to follow:
Step 1
To make the roux, melt butter in a saucepan over medium heat. Add flour, whisking constantly for 1–2 minutes until a light golden paste forms.
Step 2
Slowly whisk in milk, ensuring no lumps form, and simmer gently until the mixture thickens for about 4–6 minutes.
Step 3
Reduce the heat to low and gradually stir in the grated cheese(s) until fully melted and the sauce is smooth.
Step 4
At this point, stir in your chosen extras, mustard, spices, and garlic, and then taste and adjust.
Step 5
Pour generously over hot, crispy chips, and garnish with spring onions or crumbled bacon for an extra kick.
Serve immediately and enjoy with friends and family.
