What you need:
Ingredients
½ cup of popcorn kernels (or a large bag of plain microwave popcorn)
100g unsalted butter
1 cup brown sugar (pilau or jaggery sugar works too)
2 tablespoons golden syrup or honey
½ teaspoon salt
Optional: cinnamon, vanilla essence, or roasted peanuts for extra flavour
Steps to follow
Step 1
(If you have plain popcorn) In a saucepan over medium heat, melt the butter and stir in the brown sugar and golden syrup.
Keep stirring until it bubbles and turns a rich golden-brown colour. You can add a pinch of cinnamon or a few drops of vanilla essence.
Remove from heat and pour immediately over the popcorn.
Step 2
Heat the oil on medium heat in the deep sufuria, then drop in 2–3 popcorn kernels to test. When they pop, the oil is ready. Add the rest of the kernels and cover the pot with the lid slightly ajar to let steam escape.
Shake the pot gently every 15–20 seconds so kernels do not burn, and when popping slows down (a few seconds between pops), remove the pot from the heat. Pour the popcorn into a large bowl.
Step 3
Gently toss the popcorn with the caramel until every piece is evenly coated. Spread the mixture on a baking tray lined with parchment paper.
Bake in a preheated oven at 120 degrees for 25–30 minutes, stirring every 10 minutes. This ensures the caramel sets properly and your popcorn stays crunchy, not sticky. Let it cool before serving.
