How to make flavoured camel milk yoghurt at home

If you're looking for a healthy, delicious twist on traditional yoghurt, camel milk yoghurt is one to add to your list.

With its growing popularity in wellness circles, flavoured camel milk yoghurt is now making its way into kitchens and cafés alike.

Whether you're after something sweet, refreshing or indulgent, these three flavours — vanilla, strawberry and mint — are simple to prepare and hard to resist.

What you’ll need:

1 litre of fresh camel milk

2 tablespoons plain yoghurt (as a starter culture, ideally from camel milk)

Optional: 2 tablespoons milk powder (for a thicker consistency)

Method

Step 1:

Heat the camel milk to approximately 85°C (185°F), stirring occasionally. This helps to denature the proteins, which is essential for good yoghurt texture.

Step 2:

Allow the milk to cool to 43°C (110°F). It should feel warm, but not hot, to the touch.

Step 3:

Add your starter culture by stirring in the 2 tablespoons of plain yoghurt (ensure it contains live cultures).

Step 4:

Pour the mixture into a clean container, preferably a glass, cover it, and incubate in a warm place (around 40–45°C) for 6 to 8 hours, or until set.

For a tangier or thicker result, you can leave it to ferment slightly longer, but no more than four days.

Step 5:

Chill the yoghurt in the fridge for at least 4 hours before adding your chosen flavouring.

To flavour your yoghurt

Vanilla

Add 1 teaspoon pure vanilla extract and 1–2 teaspoons of honey or sugar (optional).

Strawberry

Stir in ½ cup of chopped fresh or frozen strawberries and 1 tablespoon sugar or honey.

Optional: Cook the strawberries and sweetener on a low heat until soft and syrupy, then allow to cool and blend before mixing into the yoghurt.

Mint

Finely chop a few fresh mint leaves and mix into the yoghurt along with 1 teaspoon of honey (optional) and a little lime zest.

Let it infuse for at least 30 minutes in the fridge for a cool, refreshing taste.
