Ingredients
2 cups of cooked rice (preferably day-old for the best texture)
1 cup chopped mixed vegetables (carrot, beans, capsicum(hoho), sweet corn, peas)
2 tbsp oil (vegetable, sunflower, or sesame)
1 small onion, finely chopped
2–3 garlic cloves, minced
1 tsp ginger, grated (optional but recommended)
2 green chillies, finely chopped (adjust for spice preference)
2 tbsp soy sauce
1 tbsp vinegar
1 tsp chilli sauce (optional, for heat)
Salt to taste
Freshly ground white pepper
Spring onions, chopped for garnish
2 Eggs (Optional: scrambled)
Steps to follow
Step 1
Start by ensuring your rice is cool and dry, because leftover rice works best because it is cool, it won’t clump.
Step 2
Heat oil in a large sufuria or non-stick pan over medium-high heat. Then go ahead and add chopped onions, and saute until translucent.
Step 3
Stir in minced garlic, ginger, and green chillies, then cook for about 30 seconds until aromatic.
Step 4
Toss in the mixed vegetables and then stir-fry on high heat to retain their crunch and colour. If you have eggs, this is the point you add them to the sufuria. Cook for 3–4 minutes, but do not overcook because texture is key in fried rice.
Step 5
Gently add the rice to the sufuria and mix, breaking any clumps. Stir everything together, then drizzle in soy sauce, vinegar, and chilli sauce. Mix thoroughly so the flavours coat every grain of rice. Add salt and pepper and stir-fry for 2–3 more minutes on high heat.
Step 6
Sprinkle chopped spring onions on top for that yumminess, remove from the heat and serve hot. Enjoy with friends and family.
