Five-minute breakfast: Make the perfect avocado toast

You do not need to be fancy; just ripe avocado, good bread, and a pinch of salt are enough to give you a powerful start.

What was once dismissed as “mzungu food” is now a staple on many Kenyan breakfast tables, as nutrition-conscious families and busy professionals look for simple, healthy, and energising morning meals.

Kenya is the sixth-largest avocado producer in the world. From the fertile hills of Murang’a to the lush farms of Kisii, avocados are abundant, making the dish both accessible and affordable.

You do not need to be fancy; just ripe avocado, good bread, and a pinch of salt are enough to give you a powerful start.

What you need:

Ingredients

1 slice of toasted brown or wholegrain bread

½ ripe avocado

A dash of lemon juice

Salt and pepper to taste

Optional toppings: A boiled egg, tomatoes, or even a sprinkle of chilli flakes for those who like a kick.

“We are lucky to have quality avocados all year round,” says nutritionist Wincate Wangari.

“They’re rich in heart-healthy fats, fibre, and potassium, perfect for a growing child, a diabetic patient, or even a gym-goer.”

Steps to follow

Step 1

Toast your bread in a toaster or a pan, depending on how crunchy you want your bread to be.

Step 2

In a bowl, mash your avocado using a fork, and then spread it on your toast. Layer the avocado depending on how much avocado you want.

Step 3

Sprinkle some salt and chilli flakes and enjoy. If you have toppings, you can spread them on first before you sprinkle the chilli flakes.

Step 4

Serve and enjoy with a cold juice, tea or coffee.
